
The latest stage of the Atlantic Hotel’s food journey is an exciting one. Head chef, Will Holland – dubbed ‘one of the most influential chefs of the next decade’ by The Good Food Guide – and his sous-chef, Adam Braithwaite, have reimagined the hotel's food offering during the past two years.
While Will brings flavours from around the world to his cooking, his love of Jersey produce is unrivalled.
‘The local produce is unique, and I have spent a lot of time getting to know the suppliers, fishermen and farmers and understanding their stories,’ he said.
‘The Taste Jersey mini tasting menu has been inspired by, and is a true celebration of, the best ingredients available. People associate seafood with Jersey, and our first two courses feature lobster and seabass from the Island’s waters. But we have added more local ingredients with locally foraged sea vegetables accompanying the seabass.’
