He may have a quiet confident demeanour but the excitement emanating from Callum Graham is palpable – and understandably so, for this young professional chef has just taken over the reins at Bohemia, Jersey’s highest-rated restaurant.

‘This is a fantastic opportunity, and I can’t wait to bring my style of cooking to Bohemia,’ he enthused.

Having relaunched the restaurant’s menu, Callum says that the new dishes have been designed to ‘make customers smile’.

‘While there will be a couple of familiar dishes on the new menu, over 90% of the dishes are brand new. It is a challenge which I have approached by thinking about what sort of food would excite me. I have started by looking at different ingredients and flavour combinations, and using these to create food which will excite our diners.’

Also providing inspiration for his dishes is the ‘incredible’ breadth and quality of local produce that Callum has discovered in the Island, much of which he will be showcasing on his Taste Jersey menu.
