As a young boy, growing up in the South of France, Christophe Stock was quickly captivated by the array of fresh produce on his doorstep. ‘I grew up surrounded by the ingredients and flavours of the Mediterranean and that is where my love of food began,’ reflected the head chef of the Hotel de France.
‘In keeping with the name of the hotel, La Terrasse is a French-themed restaurant,’ Christophe explained. ‘But, in keeping with my style of cookery, it will be French fusion, blending French techniques and local ingredients with some exciting twists to create something unique for diners.’ As well as introducing Christophe’s cuisine to diners, Taste Jersey is an opportunity for Islanders to discover the new restaurant.
‘There are three central dining areas, each of which offers a very different feel,’ added Christophe. While all areas serve the menus from La Terrasse, the Palm Room is defined by its towering palm trees, the bistro-style area features the extensive bar, and there are covered and open terraces, which are hugely popular in the summer, affording views of wonderful sunsets.
