With three open kitchens in The Royal Yacht – Sirocco, Zephyr and The Grill – diners can enjoy the theatre of eating out, as well as the food.
In Sirocco, head chef Steve Walker’s award-winning cuisine captures the feeling of modern luxury, which epitomises the hotel. Describing his food as ‘modern British with international influences’, Steve curates each dish to give diners the optimum taste experience.
‘You have to stay true to the product,’ Steve explains. ‘We are blessed with such high quality ingredients here – Jersey scallops, for example, are probably the best in the world – so it really is all about flavour. We want the plates to look pretty, but the emphasis is on doing the products justice and delivering real food.’
